What it returns

The total supply of every stablecoin on one chain, one point per day at 00:00 UTC, over the last 7, 30, 90, 180 or 365 days, or its whole history with days=all. circulatingUsd is every stablecoin whatever its peg, converted to USD; usdPeggedUsd is the dollar-pegged ones alone. Windows count back from the newest point on record, normally the current UTC day; a chain no longer tracked answers a series that ends early. A chain whose stablecoins began recently answers fewer points than days, and a day missing from the record is left out rather than filled in.
